White Beans and Spinach

- 2 tablespoons water
- 2 garlic cloves, minced
- 8 cups fresh spinach (about 6 ounces)
- 3/4 cup canned cannellini beans, rinsed and drained
- 1/8 teaspoon salt
- Dash cayenne pepper
- Dash ground nutmeg
- Place water, garlic and spinach in a large skillet. Cook, covered, over medium heat just until tender, 2-3 minutes, stirring occasionally. Stir in remaining ingredients; heat through.

This is a great recipe. I will be making this over and over. So easy and delicious. Add some cooked chicken and it's a full meal. Wonderful recipe.

We loved this as a side dish with sausage and mushroom ravioli. I added some sautéed onion and a touch of hot pepper flakes to the mixture. Definitely will make this again!
