Sweet Macaroni Salad
Total TimePrep: 20 min. + chilling
- 1 package (16 ounces) elbow macaroni
- 4 medium carrots, shredded
- 1 large green pepper, chopped
- 1 medium red onion, chopped
- 2 cups mayonnaise
- 1 can (14 ounces) sweetened condensed milk
- 1 cup cider vinegar
- 1/2 cup sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Cook macaroni according to package directions. Drain and rinse in cold water; drain well.
- In a large bowl, combine macaroni and vegetables. Whisk together remaining ingredients until smooth and sugar is dissolved; stir into macaroni mixture. Refrigerate, covered, overnight.
Nutrition Facts2/3 cup: 400 calories, 23g fat (5g saturated fat), 10mg cholesterol, 332mg sodium, 43g carbohydrate (22g sugars, 2g fiber), 6g protein.

Note to Melva I am with you 100%. but got a kick out of reading a lot of those "reviews". A good cook has no problem experimenting- -I always thought these recipes were a great start and of course lots of people have different tastes, and diets. So friends, keep on cooking - however you want to do it-

I am amazed how some reviewers review other reviews! Taste of Home instructs the review writers to provide a review on what you thought of the recipe AND HOW YOU ADJUSTED IT. I really enjoy reading all the reviews. I've been married (and cooking) for fifty nine years so I would qualify as a not necessarily great cook but definitely an experienced one. I can tell an occasional review came from an inexperienced cook and it takes me back to my own neophyte days in the kitchen. And then there's the reviewer who thinks the recipe should be made EXACTLY as written and stand on its own merit. Then there's the creative, uninhibited cook cook who sees great potential in a recipe and with a few or a lot of changes tells us how it became uniquely theirs. Some remind us of the problems of food allergies, some tell of family preferences and some give creative solutions to substitutions made because an ingredient wasn't available, and I often benefit from these little gems of information. At eighty two years young I am never to old to learn something new. I am grateful that there are so many cooks out there willing to share their recipes and experiences with us and I benefit as much from reviews about negative results as about happy outcomes. I’ve been making this recipe for years and everyone loves it. To the person who asked about leaving out the condensed milk. I wouldn’t. That’s what makes it different. Yes there’s a lot of sauce. If it’s too much don’t use it all. I get a kick out of reviews where people change the recipe the first time they make it. It’s not really a review of the recipe then is it but so what? It’s certainly not worth chastising someone over it.

this was a good tasting salad however I did add more sugar than the recipe calls for as it was too vinegary for my families taste. the dressing made twice as much as needed and I threw out half of it. Half the dressing ingredients would have been plenty for a 16 oz box of macaroni. I will for sure make it again. Thank you for a good salad recipe!

This sounds yummy, but since I don't like green peppers, I wonder if a substitution of cucumbers would work? Thoughts?

How do you think this might be, omitting the sweetened condensed milk, since you are already adding sugar??

EVERYONE in my family loved it. Added chopped broccoli, chopped spinach, a little sweet pickle relish, really whatever is ripe in my garden. Always looking for a place to hide veggies for a family who is so picky. If they only knew...haha. Love love mayo but 2 cups is a bit much.

Just because her adjustment doesn't appeal to your taste doesn't mean you're smarter or correct. I haven't made this recipe yet because I just saw it, but it looks very good so I will soon. For now, I'll give it 5 stars because I'm pretty good at judging the tastes of potential combinations of ingredients, and a rating is required to leave a comment. However, I will do as I always do, and make the recipe exactly as stated and then leave a revised review. Usually I can guess what things I may change to suit my family's tastes. Your sarcastic comment about leaving a car in the while being washed is just plain stupid, even though you think you're funny? You're not. This is what an intelligent person does with a recipe William. Make the recipe exactly as it appears, then give your review. Notice the word "YOUR". Then once you know how you and your family feel about it and what they might like added or taken away-you adjust to taste. Everyone has different tastes. You apparently like it exactly as it is. You imply that it's the only way and someone who adjusts the recipe to THEIR liking is stupid. Ridiculous. I don't know how old you are, but you are very immature, arrogant, and closed-minded.
