- 1 pound ground beef
- 1-1/2 teaspoons chili powder
- 1-1/2 teaspoons dried oregano
- 1-1/2 teaspoons salt
- Pepper to taste
- 3 cups cooked long grain rice
- 1 can (7 ounces) mushroom stems and pieces, drained
- 1 medium green pepper, sliced
- 1 cup plus 2 tablespoons sugar
- 1/3 cup cornstarch
- 2-1/2 cups cold water
- 1/3 cup white vinegar
- 1/3 cup ketchup
- 1-1/2 teaspoons salt
- Pepper to taste
- In a large skillet, cook beef over medium heat until meat is no longer pink; drain. Stir in the chili powder, oregano, salt and pepper.
- In a greased 3-qt. baking dish, layer the rice, beef mixture, mushrooms and green pepper; set aside. In a large saucepan, combine sugar and cornstarch; stir in the remaining sauce ingredients until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened.
- Pour over layered ingredients. Bake, uncovered, at 350° for 30 minutes or until heated through.

I wasn’t sure how this would turn out but my family really liked it. I used 1lb of ground chicken and 1 lb of ground beef. I did add diced onions to the meat mixture and only used 3/4 cup sugar for the sauce. I served with a green salad and garlic bread. It was a very Good dish that I will make again. If you don’t like peppers or mushrooms you can leave them out. You can sauté them in oil or butter and serve it over the top of your own serving so picky eaters won’t turn their nose. Snap peas, broccoli, bamboo shoots, and/or carrots may also compliment this dish. However, picky eaters may not like these options either. Just make a plain casserole and serve veggies on the side to mix in. My family liked it as is plus onions.

Im not a very experienced cook but am trying new things while my wife is away for a while and this looks like something easy and tasty. But I have fussy kids, that dont like greem peppers or mushrooms. Any ideas on substitutes for those or can I delete one or both?

Husband really liked. Me okay. Used 3/4 cup sugar. Sauce was the right amount for us.

I have a recipe for the easiest sweet/sour sauce that I have used for 50 years! I call it cups o' sauce 1 cup white sugar..(if you use brown sugar maybe decrease to 3/4 cup) 1 cup water 1 cup catsup 1 cup of vinegar- white or red wine Put all ingredients in saucepan and boil then turn down to simmer for 10 minutes or so. Let cool. If it is still too thin return to heat and add 1 tsp cornstarch and 1 tsp water in a cup. stir and add to sauce until thickened the way you want it to be. Of course you can double recipe. This works great with chicken or pork! You can use it for a basting sauce for chicken or pork ribs. I often saute pork or chicken cut into 1" pieces coated with corn starch until brown and no longer pink when you poke it with a fork.. Remove and saute favorite veggies, add meat , mix it up and then add some sauce. So easy! (If I coat meat pieces with cornstarch coating adding cornstarch to the sauce in the beginning is usually not necessary.) Veggies I usually use are onions, bell peppers, broccoli. Sometimes I add pineapple chunks and chopped tomatoes. just my preference...This is great over rice or noodles and so quick to put together! And the sauce keeps in refrigerator since there is vinegar in it. Make sauce ahead and really quick dinner!

This recipe has been a family favorite for a very long time. As mentioned in the previous reviews, the sauce is very sweet, so decreasing the amount of sugar would be helpful to those who don’t like it as sweet. Also, in my opinion, the amount of sauce is way more than is needed for the recipe, so I would suggest either reserving some of the sauce for another purpose or making less of it. The way the ground beef is seasoned in this recipe makes it taste very good, and I always use fresh mushrooms instead of canned mushrooms. Definitely a keeper!

Why must you print twice to get ingredients then directions and they're always covered with ad prints or comments. Site used to be so much better. I'll get recipes elsewhere. I don't have the paper to waste

This recipe was very easy to prepare! It was a little sweeter than my husband and I preferred, but I will definitely try it again with less sugar.

Very good recipe but as someone else noted it was very sweet. I would make it again but would cut back on the sugar somewhat next time.
