- 1 cup uncooked elbow macaroni
- 1 pound lean ground beef (90% lean)
- 1 medium onion, chopped
- 1 can (28 ounces) diced tomatoes, undrained
- 1 can (8 ounces) tomato sauce
- 2/3 cup frozen corn
- 1 can (4 ounces) chopped green chiles
- 1/2 teaspoon ground cumin
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 1/4 cup minced fresh cilantro
- Cook macaroni according to package directions; drain. Meanwhile, in a 6-qt. stockpot, cook and crumble beef with onion over medium heat until meat is no longer pink, 6-8 minutes; drain.
- Stir in tomatoes, tomato sauce, corn, chiles and dry seasonings; bring to a boil. Reduce heat; simmer, uncovered, until flavors are blended, about 5 minutes. Stir in macaroni and cilantro.

I added many ingredients to spice up this very bland recipe. Ketchup instead of tomato sauce. garlic Powder , worcestershire sauce, chopped celery, and diced green pepper. Children might prefer the original recipe but my adult family likes more flavor.

Good, I made it a second time but changed the tomato sauce to paste and used Rotel instead of tomatoes and bell pepper instead of corn. I also put a tablespoon of ketchup. Delish!!

As is this recipe is good BUT bland..I added 2 tbsp taco seasoning..omitted cumin...added 1 cup chunky salsa instead of tomato sauce and to make it healthy used ground turkey instead id ground beef....VERY tasty with these minor changes..

As written, this does not end up to be what my family considers "southwestern" BUT, it is easy enough to fix that. 1) Substitute 2 cans of Rotel diced tomatoes for the 28oz can of tomatoes. Rotel comes in 3 heat levels, so be careful with that. The mild is quite bland and lacks that Mexican flair. Medium is a good choice, giving some heat, but not too much. The lime cilantro is very goid,without having much cilsntro taste though. So if you like cilsntro, you need to add more. If you do not like cilantro, this will not bother you at all . The original is HOT in my opinion. Choose accordingly. 2) Next, DEFINATELY SUB OUT THE 8 oz CAN OF TOMATO SAUCE FOR 1 C. OF SALSA. We like Newmans Own Salsa. But again CHOOSE CAREFULLY, because there are multiple varieties, including fruit varieties, which do NOT work in this dish. If you really like cilantro, use the stems, finely minced. The stems have twice the flavor of cilantro than the leaves do.

Since many of the reviews mentioned that this recipe was lacking in flavor, I used fire roasted diced tomatoes with seasonings added, substituted the tomato sauce for a can of condensed tomato soup, and added two tablespoons of taco seasoning instead of the cumin. I also served it with a shredded Mexican cheese blend on top. With some modifications, this recipe was delicious as well as super quick and easy!

I made this using ground chicken breast and Rotel canned tomatoes with green chilles. I did not add the macaroni and instead added kidney beans and served it like chili with a spoonful of sour cream and green onion on top. So delicious and healthy too! This is definitely a favorite in our house.

Lacked in flavor, will adjust recipe next time with other seasonings etc others have mentioned.
