Simple Lemon Parsley Potatoes

- 3 pounds small new red potatoes, quartered
- 1/2 cup butter, melted
- 3 tablespoons lemon juice
- 3 tablespoons minced fresh parsley
- Cook potatoes in boiling salted water until tender, about 15 minutes; drain. Combine butter, lemon juice and parsley; pour over the potatoes and stir gently to coat.

A lovely, simple side dish for a chicken or fish meal, and leftovers can be served cold as a potato salad.

So simple and so perfect! Served these with some Tuscan scrambled eggs and a salad for a delicious summer meal.

Very simple yet a great addition to so many meals. I am an onion fiend so I added some chopped red onion, still delicious.

I only used 1 tbsp of lemon juice and 1/3 cup parsley. Delicious and so easy!~ Theresa
