Quick Tomato Soup

Makes6 servings (1-1/2 quarts)
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 teaspoon curry powder
- 1/4 teaspoon onion powder
- 1 can (46 ounces) tomato juice
- 1/4 cup sugar
- Oyster crackers or croutons, optional
- In a large saucepan, melt butter. Stir in flour, curry powder and onion powder until smooth. Gradually add tomato juice and sugar. Cook, uncovered, until thickened and heated through, about 5 minutes. If desired, serve with crackers or croutons.

Did not like this recipe at all!! Too much curry for us—had to throw it out. Won’t be making again!!

5 stars for taste. I used Spicy V-8 as that is what I had in the cupboard, omitted sugar entirely & used my own curry powder mix. I loved it. I don't know why I haven't been using V-8 juice all this time to make tomato soup! It went together in less than 10 minutes & so good on a cold day. Next time, I will get reduced sodium V-8.

Made a batch and about threw up. If I wanted TOMATO CANDY, I would have looked up tomato candy recipes. I looked up TOMATO SOUP recipes. I have made good tomato soup and this was not it! I even reduced the sugar. You DO NOT use sugar for tomato soup. You use baking soda to reduce the acidity and good quality tomatoes for the natural sweet flavor. So, I tried again. NO sugar this time. I won't make it again. Blech! Wish I could give zero stars.

Love this soup the curry makes it pop, just give it a diffrent taste. I add a whole fresh onion, chicken broth, garlic pepper, lawry's season salt and parsley. A little more butter and sugar for taste.....ohhhhh la la.

Recipe sounds great. I'll give it a whirl and add a grilled cheese sandwich to go along with it------favorite childhood combo.

I use this recipe for my soup and sandwich restaurant and received excellent reviews from customers the only thing different is instead of the flour and I add heavy cream to make it rich and creamy..the curry is what sets this apart from the rest IMO..
