Pork Chop Dinner for Two

- 2 pork loin chops (3/4 inch thick)
- 1 tablespoon canola oil
- 2 medium potatoes, peeled and sliced
- 1 medium onion, sliced
- 1 medium carrot, sliced
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- In a large skillet, brown pork chops in oil. Place in a greased 8-in. square baking pan. Layer potatoes, onion and carrot over chops. Dot with butter. Sprinkle with salt and pepper.
- Cover and bake at 350° for 55-60 minutes or until pork chops and vegetables are tender.

Quick , easy one dish meal. The pork chops were very tender but the vegetables were the best part, they cooked down and got some golden brown buttery flavor! I also sprinkled everything with seasoned salt.

added a little pork rub 1/2 hour before i browned them also a little italian seasoning over veggies, very tasty

It taste better if you add regular mrs dash, italian herb seasoning, onion powder, garlic powder, and diced mushroom. I also only have the dish covered for the last 20 minutes instead of the entire time and it tasted a lot better.

This sounds good in theory, but it was very bland. I even added a little Mrs. Dash seasoning to flavor up the pork but it still wasn't very flavorful. The potatoes had little to no flavor at all but the carrots and onions were good. The pork was also quite dry. Easy to whip up but not worth it when it has hardly any taste.

This was a real surprise. Chops came out tender and tasty and the vegetables cooked with them were excellent. Only thing I did different ... added a bit of powdered garlic and I NEVER peel potatoes. Wash them and keep the skins. But as for this recipe ... I was in a hurry and wanted different and had no expectations. I WAS surprised and will absolutely make it again.

This was an amazing find. The vegetables were tasty as well as the pork. Bake time provided extra time to do chores. Definitely a great one pot meal.

I added a pinch of seasoned meat tenderizer to the pork and some minced garlic to the dish. Came out fantastic and my hubby likes it too!
