Overnight Cherry-Almond Oatmeal

- 4 cups vanilla almond milk
- 1 cup steel-cut oats
- 1 cup dried cherries
- 1/3 cup packed brown sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- Additional almond milk, optional
- In a 3-qt. slow cooker coated with cooking spray, combine all ingredients. Cook, covered, on low until oats are tender, 7-8 hours.
- Stir before serving. If desired, serve with additional milk.

Not my favorite oatmeal, but I would eat it again. It was very gummy. As my daughter said, it did not look very good, but it was delicious.

I used unsweetened vanilla almond milk. Dried cherries were great, it would also be good with dried blueberries or cranberries too! I have a 6qt slow cooker and I used the 10 hour setting to make sure that they wouldn't overcook. You could also double the recipe, but my guys are tree nut allergic so I'll be the only one eating this. I packed the leftovers into jars, I'll just add a splash more almond milk to it and reheat them throughout the week.

I have to say that this recipe is growing on me as I have eaten it 3 days in a row and have a couple more days to go. I upped the cinnamon. Thanks to a friend who advised me that this was way too sweet, I cut the sugar in half and was so glad I did as it was still too sweet for me for breakfast.

I have made this twice now. The first time pretty much exactly as it says, except I used raisins because that is what I had. The second time I used 1% milk and half the cinnamon. It turned out pretty well. You need to turn your crock pot on pretty late at night and then be up in good time to stir it. It does seem to stick on the sides of the pot even though I greased it. It tastes good and I will likely make it again because you can make it at night and it's ready for breakfast. The 1% turned out just as good as the almond beverage and the raisins were just fine.

This is the second time I made this. We really like it. I stir it a couple times so it doesn't get scorched on the sides as a couple of reviews recommend. I cook it for less time also.

We loved it except for the sweetness. Next time, we'll try cooking it without the sugar and add our own if need be.

This was a warm, hearty breakfast on a cool fall morning. I made mine on the stovetop since I didn't think of having it in time to make it the night before. All I had on hand was sweetened almond milk so I should have cut back on the brown sugar as it was plenty sweet.

My sister and I have made this numerous times. Tweaking it as we go. We actually don''t add any sugar (ia little can always be added upon serving if you want). We have tried many different dried fruits and raisins. Leftovers reheat well in small portions as needed. Very tasty and easy. If only cooked for 7 hours the tendency to scorch is minimised. Last one to bed turns it on and the early riser puls the plug.

This is very tasty and really filling but I did have a few issues. I tried the recipe about 6 times tweaking it a bit each time. Most importantly, I found that cooking it during the day then re-heating it in the morning works best. It really needs periodic stirring to keep from sticking and scorching. I use 5 cups of almond milk and a bit more cinnamon and brown sugar. I have also used 1/2 dried cherries and 1/2 dried cranberries. One of my favorites now that I've perfected it.
