- 4 large baking potatoes (about 2 pounds)
- 2 tablespoons butter, melted
- 2 teaspoons paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Peel potatoes and cut into large chunks; place in a shallow 2-qt. baking dish. Drizzle with butter; toss to coat. Sprinkle with the paprika, salt and pepper.
- Bake, uncovered, at 350° for 45-60 minutes or until potatoes are tender.

Doubled this recipe for a larger group and then realized I was nearly out of paprika. I only had one tsp worth so I grabbed my smoked paprika and used only 2 tsp of it (rather than three). I also added onion. Folks, these potatoes were SO good, my elderly mother in law kept going back for more! No leftovers!!

Made this recipe again and added onion as gunslinger suggested. Used garlic pepper seasoning that added a little zip.

Very tasty. Great alternative to fried potatoes! Next time I will probably add some onion to it.

We really enjoyed this recipe! Potatoes were crispy on the outside and tender inside. Easy to prepare and additional spices can easily be used for different flavors. I did sprinkle with Mrs. Dash's original, will try a different blend next time!!

LOVED these oven-roasted potatoes. I've never used paprika in such quantity when roasting any type of vegetables and I was a bit skeptical that it would be too much. However, it was just perfect! I followed the recipe exactly and both the color and flavor were absolutely wonderful.

This is a good basic recipe. I added chopped onions, which definitely improved the taste. If I were preparing a roast of some kind with these potatoes I think I'd add the potatoes to the roasting pan to add flavor, but they are good on their own.

Great crowd-pleasing side dish. I served this to several picky eaters, and everyone liked it. My husband and I would like a little more flavor, however.

Have been making these ever since the recipe came out in the '90. Very good and low cal which is great for me since I have a potato eating man and he likes these also.
