Orange Banana Nut Bread

Makes2 loaves (12 slices each)
- 1-1/2 cups sugar
- 3 tablespoons canola oil
- 2 large eggs, room temperature
- 3 medium ripe bananas, mashed (about 1-1/4 cups)
- 3/4 cup orange juice
- 3 cups all-purpose flour
- 1-1/2 teaspoons baking powder
- 1-1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup chopped walnuts
- In a bowl, combine the sugar, oil and eggs; mix well. Stir in bananas and orange juice. Combine the dry ingredients; add to banana mixture, beating just until moistened. Stir in walnuts. Pour into 2 greased 8x4-in. loaf pans.
- Bake at 325° until a toothpick inserted in the center comes out clean, 50-60 minutes. Cool for 10 minutes; remove from pans to a wire rack to cool completely.
Freeze option: Securely wrap cooled loaves in foil; freeze. To use, thaw at room temperature.

really nice flavors. Quick to mix up. I did not have nuts, so I added some chopped fresh cranberries, which turned out very nice

I reduced the sugar to one cup and increased the oil to 1/3 cup. I also replaced 1 cup of all purpose flour with whole wheat flour. Finally, since I didn't have any nuts, I used dried cranberries instead. Turned out nice and moist, and plenty sweet enough.

Addendum to previous review (17 May 2020): Following our tried-and-true family recipe for banana bread, I used light brown sugar in this one.

I always add 2 T of orange zest and a teaspoon of orange extract to get a true orange flavor.

Although a good banana bread recipe, we couldn't taste the orange at all. Will try again tomorrow after the flavors have settled.

I loved the flavor and texture combinations in this quick bread. With the addition of orange, it is especially nice for the holidays. The one thing I changed was the amont of oil: to me, the finished product seemed a bit dry so I increased the oil to 1/2 cup with good results. I also baked the bread the day before and, after cooling completely, wrapped the loaf in foil e By the next day, it was much more moist (just the way I like it). Don't skip the walnuts - they add great texture and flavor, I think!

This was really good! A very moist banana bread with a hint of orange. The recipe made two loaves, so I froze one for Christmas Day and shared the other. I did omit the walnuts, only because I didn't have any. It didn't affect the recipe at all - although I'm sure the walnuts would be great if added! I'll put this one away in my Christmas Baking File!

This is one of the best banana breads I have ever made. Super moist and very flavorful. Only had 1 cup of white sugar so added quarter cup light brown, recipe was very forgiving. Made 4 small loaves ,baked for 25 minutes, turned out great!Thank you,I will definitely make again.

An absolute 10 ! Have yet to find anyone who didn't like this - even used the nutritional facts for those on weight watchers to be able to figure their points. (Which is 4 points per slice.)
