Iva’s Peach Cobbler

- 6 to 8 large ripe peaches, peeled and sliced
- 2-1/2 tablespoons cornstarch
- 3/4 to 1 cup sugar
- 1 cup all-purpose flour
- 2 large egg yolks. room temperature
- 1/4 cup butter, melted
- 1 teaspoon baking powder
- 1 cup sugar
- 2 large egg whites, room temperature, stiffly beaten
- Combine peaches, cornstarch and sugar; place in a greased 13x9-in. baking dish. For crust, combine flour, egg yolks, butter, baking powder and sugar in a bowl. Gently fold in egg whites. Spread over peaches. Bake at 375° until the fruit is bubbling around edges and top is golden, about 45 minutes.

The best cobbler recipe I've tried, and is now my go-to cobbler recipe. It was so easy to make, I followed directions exactly, and we love the crunchy topping!

Vickie there’s no whipped cream in this recipe. In the video it’s whipped egg whites being folded into the batter. Hope this helps.

So good, so easy, great served with or without ice cream. All with on-hand ingredients. My littlr granddaughter is learning to cook. I am going to teach her to make this. I added a little cinnamon and a bit of nutmeg. Delicious! It is peach season here. Will make it often.

This is a great recipe. I used a 29 ounce can of drained slice peaches in heavy syrup instead of fresh peaches. Then I add the other Ingedients listedcto add to the Sliced peaches in Iva's Peach Cobbler Recipe. I double the CRUST ingredients and bake as Iva's recipe states. It's delicious.

Claudia, I made this recipe using one 29 ounce can of Del Monte Peach Halves in heavy syrup. I drained the liquid from the can and had way more than enough topping for that amount of peaches so I refrigerated 1/2 of the topping mixture to use in a couple of days in a second batch of Iva's Peach Cobbler. The version I made was plenty of desert for 4 people and I could have stretched it for 6, especially by adding ice cream on top. I did add a teaspoon of cinnamon to the peaches and I did cut back the sugar to 3/4 cup in the topping and 3/4 cup added to the peaches and it was still very sweet and delicious. Great recipe and it only takes a few minutes for prep if you have all the ingredients handy. I will definitely keep this one on hand and use it for any cobbler (Apple, Blueberry, Raspberry, Cherry or whatever).

No fresh peaches locally yet, so I used a large #10 can of sliced peaches in heavy syrup and doubled the ingredients for the crust and used a 1/2 sheet deep steam pan. I added two tsp of fresh ground cinnamon and one tsp of fresh ground ginger. Then I sprinkled a heavy dose of frozen wild blueberries. This was a big hit for our large family reunion Easter dinner.

I made this for a family reunion! Big hit super easy. I did add a dash of nutmeg and cinnamon.
