Ice Cream Snowballs
Total TimePrep: 10 min. + freezing
- 1/2 gallon vanilla ice cream, softened
- 3-1/2 cups sweetened shredded coconut (about 10 ounces)
- Fresh mint, optional
- Scoop ice cream into 12 balls. Place on a baking sheet and freeze until solid. Roll in coconut. Garnish with mint if desired.

My family has been making snowballs for years, but we serve them with hot fudge around the ball, and always toast the coconut. Absolutely delicious! 5 star dessert with this adjustment.
