Grilled Peppers and Zucchini

- 1 medium green pepper, julienned
- 1 medium sweet red pepper, julienned
- 2 medium zucchini, julienned
- 1 tablespoon butter
- 2 teaspoons soy sauce
- Place the vegetables on a double layer of heavy-duty foil (about 18 in. x 15 in.). Dot with butter; drizzle with soy sauce. Fold foil around vegetables and seal tightly. Grill, covered, over medium heat for 5-7 minutes on each side or until vegetables are crisp-tender.

Simple and delicious! Great side dish, especially when grilling. If cooking in the kitchen, I’m sure they could be baked in the oven.

Simple and easy to make. WIsh there was more flavor as is. I use different dressings, oil based, to flavor mine.

My family and I love this recipe. We are making it again tonight. Flavorful and yummy. My husband just puts them in a grill pan and they turn out beautifully.
