Makes8 servings (2 cups syrup)
- 6 large eggs
- 1 cup 2% milk
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 2 tablespoons butter, melted
- BUTTERMILK SYRUP:
- 1/2 cup butter, cubed
- 1-1/2 cups sugar
- 3/4 cup buttermilk
- 2 tablespoons corn syrup
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- Confectioners' sugar
- Fresh blueberries, optional
- Preheat oven to 400°. Place first 4 ingredients in a blender; process just until smooth.
- Pour melted butter into a 13x9-in. baking dish; tilt dish to coat. Add batter; bake, uncovered, until puffed and golden brown, about 20 minutes.
- Meanwhile, place butter, sugar, buttermilk, corn syrup and baking soda in a small saucepan; bring to a boil. Cook, uncovered, 7 minutes. Remove from heat; stir in vanilla.
- Remove pancake from oven. Dust with confectioners' sugar; serve immediately with syrup and, if desired, fresh blueberries.

So easy to make and tasted great! Everyone loved it and nothing left. Will definitely be making again and again. Your imagination is the limit with toppings for this wonderful pancake.

Well as a German I’m not happy to see this not classic dish as a German recipe. Especially nobody here will mix a batter in a blender. You will destroy the fluffiness by blending the air out of the batter. There might be similar dishes in Germany called ‚Bloz‘. A German Pancake is a Crépe like dish made with eggs, milk, flour and soda water. Sugar if you want it sweet. After you fill it with whatever you want and roll it. The Classic is Cinnamonsugar.

Solid, but I recommend baking at 425 for 20 mins, then dropping the temp to 350 for the last 5 mins or so (total of 25 mins). You'll get a better center.

excellent dish for breakfast, easy to make. Topped it with blueberries, whip cream and syrup,Yummy. Will make the buttermilk syrup syrup next time

I've tried many recipes for these; I really like this one for the ease. I slice one large apple in the bottom of the pan, sprinkle cinnamon sugar, then pour the batter. I make it a little smaller with 5 eggs, 3/4 c milk, 3/4 cup flour and a little vanilla. Wonderful in a 13 x 9 pan. I top with real maple syrup. I will try the buttermilk syrup at some point! This makes enough for 2 of us for Sunday breakfast and leaves some leftover for the following day. A

I have made this German pancake for years. Same recipe, same syrup recipe. Everyone just loves it and it is easy to put together. If there is any syrup left over it is delicious warmed over ice cream.

This recipe is a real family favorite, and can be downsized in a smaller pan for a smaller family. The toppings, of course, can be varied by what's in season, but a syrup, a fruit, and a dusting of powdered sugar is the idea.
