Fresh Cucumber Salad
Total TimePrep: 10 min. + chilling
- 3 medium cucumbers, sliced
- 1 cup sugar
- 3/4 cup water
- 1/2 cup white vinegar
- 3 tablespoons minced fresh dill or parsley
- Place cucumbers in a 1-1/2- to 2-qt. glass container. In a jar with a tight-fitting lid, shake remaining ingredients until combined. Pour over cucumbers. Cover and refrigerate overnight. Serve with a slotted spoon.

I read the reviews & cut the sugar in half; glad that I did. I didn't have fresh dill, so I used dried dill with 1/3 the amount to compensate. We really like this & will definitely be having it often in the summer months.

Its a good recipe, i just wish i read the reviews first. You definely need to reduce the sugar by half, i had to make a tangy french dressing to cut the syrupy sweet taste!

I used small, Persian cucumbers. I, too used red wine vinegar and cut back the sugar by half. Added a little red onion for color. A keeper!!!

This is sickeningly sweet. I took it to a potluck and we had to drain and copiously rinse the cucumbers with water, add vinegar, salt and salad dressing to save the dish. I would rate this recipe a negative 3. A loss on on how to murder cucumbers.

So fresh, so delicious! For best results let sit overnight, but honestly, I have made this and served it within an hour. I love to add super-thin sliced onions. Good either way!

Iand#039;ve been making this recipe for years. Only difference: red wine vinegar, double the sugar, no water, salt and pepper. Add red onion rings, julienned red peppers, cherry tomatoes halved. Yum!!!

Delicious, I used 1/2 the sugar and rice wine vinegar. You can add more cucumber to the dressing for the next day. I'll make this again. Janet VFE

I use rice wine vinegar and a little bit of sesame oil. Love it.
