Easy Lemon-Blueberry Jam
Total TimePrep: 5 min. Cook: 10 min. + chilling
- 4 cups fresh blueberries
- 2 cups sugar
- 1 package (3 ounces) lemon gelatin
- In a large saucepan, slightly crush 2 cups of blueberries. Add remaining berries and sugar, mix well. Bring to a boil, stirring constantly. Remove from the heat; stir in gelatin until dissolved. Pour hot jam into jars or containers. Cover and cool. Refrigerate.

While I prefer using fresh lemon juice in my lemon/blueberry jam, this was a speedy, easy recipe that everyone enjoyed! I live in the "blueberry belt" so had lots of extra and wanted to give this a try!! If you are new to jam making,,,try this!!

I might make this with a little less sugar next time around, but overall it was delicious. If you're like me and haven't made a gelatin jam before, just a heads-up that it does take awhile to set - I made it in the afternoon, and it was still liquidy when I went to bed! By the time I woke up in the morning, though, it was ready to go.
