Cool Beans Salad
Total TimePrep/Total Time: 20 min.
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon sugar
- 1 garlic clove, minced
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/4 teaspoon pepper
- 3 cups cooked basmati rice
- 1 can (16 ounces) kidney beans, rinsed and drained
- 1 can (15 ounces) black beans, rinsed and drained
- 1-1/2 cups frozen corn, thawed
- 4 green onions, sliced
- 1 small sweet red pepper, chopped
- 1/4 cup minced fresh cilantro
- In a large bowl, whisk the first eight ingredients. Add the remaining ingredients; toss to coat. Chill until serving.

I decided to try it warmed up in the microwave, and it is just as delicious warm as cold. This is one of my favorite recipes of all time.

I am always looking for recipes for meatless meals. This salad is perfect. It is delicious and healthy, a real keeper.

This is soooo tasty! I've got an almost identical recipe about 20 years ago from a local restaurant. My only addition is Mexican Queso Fresco or Cojita cheese. I crumble it into the salad. Also, it mades a delicious quesadilla using Jack cheese. Roasted, diced Poblano chilies are also awesome , kicks it up a notch!

I make this salad several times each summer. It goes well as a side for a cookout, whether with hamburgers, grilled chicken, or ribs. It tastes very fresh and healthy. Everyone loves it and can't get enough of it! It's great even by itself? .

I have made quite a few great ToH recipes, but I think this one might be the best! I could see taking this one to a carry-in. It is a full one dish meal, easy to make and so delicious it went on our regular summer rotation after one tasting. It makes plenty for 4 plus a bunch of lunch leftovers. I decided to use 1/3 cup of oil, extra cilantro and chili powder. Also I use Trader Joe's frozen roasted corn, as it adds extra flavor. You could also make a modified version of this using all pantry ingredients that would require minimal or no cooking for a power outage meal. Thank you for a perfect recipe.

I made this last night for the first time...it was absolutely delicious! For me, it is a main dish, not a side dish. I will be making this on a regular basis and also for potlucks when we can get back to getting together.

Since I found this recipe, it's a staple in my house. We keep it in the fridge all the time. As yet, we haven't tired of this.
