Chocolate Pudding For One
Total TimePrep/Total Time: 10 min.
- 1-1/2 teaspoons cornstarch
- Pinch salt
- 1/2 cup milk
- 1/4 cup semisweet chocolate chips
- Whipped cream and baking cocoa, optional
- In a 2-cup glass measuring cup, combine the cornstarch, salt and milk until smooth; add chocolate chips. Microwave, uncovered, on high for 45 seconds or until hot but not boiling; stir. Cook 20-30 seconds longer or until mixture just begins to boil; stir. Cool. Pour into a small bowl. If desired, top with whipped cream and sprinkle with baking cocoa.

I added a tablespoon of sugar ; wisked in with the corn starch before adding the milk. It worked perfectly ; tastes mighty fine . Used mini choco chips.

I looked for a single serve coconut pudding and couldn’t find it, so I Used these proportions to make a coconut pudding with premium white chips. Would have been better with coconut milk or cream, but it’s corona time and I didn’t have any. Uses 2%. I did have coconut oil though it helped added a tablespoon or so. Added a nice pinch of shredded coconut. Mine didn’t get thick either, but when this happens it’s due to over cooking the corn starch. It thickens slightly with the heat, then undoes itself. So my pudding was a luxurious coconut sauce which I consumed with much enjoyment. I’ll try again. And heat One minute, then in twenty second intervals until just starting to simmer.

I wanted some chocolate pudding, so I found this recipe. It looked amazing, and the reviews were 5 stars! Do I tried this, but it never got thick. After 2 hours in the fridge it wouldn't set. Even after 10 hours in the fridge it was still like a really thin smoothie texture, not at all like pudding should be! Followed the recipe exactly. Throwing this away.

Usually I like leftovers, but I will make this again when I want a solo chocolate fix! I used about a tablespoon butterscotch chips and the rest chocolate - delicious!

I doubled the recipe and made it last night for a quick chocolate fix! Yum! It's good to have a tiny whisk on hand to mix the milk and cornstarch. I also used potato starch instead of corn and it worked perfectly. Enjoy!

I have made this recipe many, many times over the years, both with semisweet chocolate chips and milk chocolate ones. I wonder how it would be with butterscotch... or maybe a combination of butterscotch and chocolate? So simple to make and really satisfies a chocolate craving!
