Total TimePrep/Total Time: 20 min.
- 1 small zucchini
- 1 small yellow summer squash
- Salt and pepper to taste
- 1 cup shredded part-skim mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Cut zucchini and yellow squash into 1/4-in. slices. Place in a greased shallow 1-qt. baking dish. Sprinkle with salt and pepper. Top with cheeses. Broil 4 in. from the heat for 7-10 minutes or until squash is crisp-tender and cheese is bubbly. Serve immediately.

I prepared this tonight with a squash I picked from the garden. It is almost too easy but so delicious. I only had Colby-Jack cheese so used that with the Parmesan. Delicious! Because it is so easy and so delicious, I will be preparing this many times.Volunteer Field Editor

I used Mrs. Dash no salt. Great easy way to to fix a medley of squash.

I would also add garlic powder or garlic salt, and fouund that the squash needed extra cooking time. I covered the dish with foil so the cheese wouldn't get too brown, and ended up microwaving it a bit. Quick and tasty though.

Fixed this for the first time tonight. Husband ate 3 helpings and I had 2. It was that delicious!I read other posts and decided to add a little bit of garlic powder. One other change was I did not have Parmesan cheese on hand, so I used Kraft Grated Parmesan, Romano & Asiago blend I had on hand for spaghetti. Worked out very well. Will be fixing again, and again, and again! Thank you for sharing!

This was very good a quick. I placed by squash under the broiler for 4 minutes then added the cheese, returned it back to the broiler for 5 more minutes and it was just right. The cheese is a good addition and not one that I had thought of before. My picky son, still would not eat it, but hubby and I really enjoyed it. I will be making this again. I do agree with the other poster, it does need something other than salt and pepper.

This was really easy to make but it needs a little something more. Since it was so quick and easy, I will be making it again. But next time, I'm going to toss the squash and zucchini with a little garlic powder and Italian seasoning to spice it up a little bit. Also, I will let the veggies broil for a few minutes by themselves before adding the cheese - the veggies weren't done enough for me by the time the cheese was browned. Overall though, the cooking method is a great idea that I had never thought of before. Thanks!
