Carrot Raisin Salad
Total TimePrep/Total Time: 10 min.
- 4 cups shredded carrots
- 3/4 to 1-1/2 cups raisins
- 1/4 cup mayonnaise
- 2 tablespoons sugar
- 2 to 3 tablespoons 2% milk
- Mix the first 4 ingredients. Stir in enough milk to reach desired consistency. Refrigerate until serving.
Nutrition Facts1/2 cup: 122 calories, 5g fat (1g saturated fat), 1mg cholesterol, 76mg sodium, 19g carbohydrate (14g sugars, 2g fiber), 1g protein. Diabetic Exchanges: 1/2 starch, 1/2 fruit, 1 fat.

If you like a fairly sweet carrot salad, this is the one for you. I found I needed to add salt, black pepper, and a tiny splash of cider vinegar to get the tangy flavor I was hoping for.

Delicious. I added pineapple tidbits (drained, of course) for added sweetness and flavor.

My husband loves carrot salad. Instead of sugar, I add grated apple. Delicious!

I love carrot raisin salad. Mom made this and we all loved it. The only change I would make is in the sugar. This is definitely too much and not necessary since the carrots and raisins are so sweet. We have become accustomed to a lot of sugar but try it without any first, and see what you think. :)

This is a GREAT, low calorie side dish. It's a tasty DIABETIC FRIENDLY dish if you use stevia on place of sugar ... as I do for my household. If you would like to taste an additional flavor, you can add pinapple tidbits.

We add shredded rotisserie chicken, a few dashes (5-6?) Of nutmeg and pepper, and probably 1/2 tbsp of salt to kill some of the sweetness. (Alternatively only use to taste or less sugar to begin with.) Chill for an hour or so for the flavors to marinate!

If you are looking for another flavor note in this salad, try adding shredded tart apple such as a Granny Smith. , I also add lemon juice to taste.
