Caprese Chicken with Bacon

- 8 bacon strips
- 4 boneless skinless chicken breast halves (6 ounces each)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 plum tomatoes, sliced
- 6 fresh basil leaves, thinly sliced
- 4 slices part-skim mozzarella cheese
- Place bacon in an ungreased 15x10x1-in. baking pan. Bake at 400° for 8-10 minutes or until partially cooked but not crisp. Remove to paper towels to drain.
- Place chicken in an ungreased 13x9-in. baking pan; brush with oil and sprinkle with salt and pepper. Top with tomatoes and basil. Wrap each in two bacon strips, arranging bacon in a crisscross.
- Bake, uncovered, at 400° for 20-25 minutes or until a thermometer reads 170°. Top with cheese; bake 1 minute longer or until melted.

Very tasty Chicken upper ! I baked mine a little bit longer. I used bone in chicken thighs. Boneless is the better choice. Super easy to put together. Next time I will use Provolone cheese. Bake in a shallow pan for even browning. I upped the oven temp to 450 after adding the bacon and tomato. Baked for about 15 extra minutes. Bacon browned perfectly.

This is my new favorite chicken dish! It tastes so fresh and is bursting with flavor. The chicken turned out juicy in the oven and prep was easy. The only change I made was to use shredded cheese instead of slices since that's what I had on hand. The combination of chicken, bacon, cheese, basil, and tomato is perfection. It's also a visually appealing dish. I served it with couscous and a salad. This is now on our go-to recipes list.

This recipe was a hit. Everyone cleaned their plates. This recipe is very easy and perfect for a weeknight dinner or company. I will say I read it wrong and cooked the bacon more than I should have but it worked out fine. It didn't burn in the oven. I used fresh mozzarella but you could use shredded or slices. I will definitely make this again. Next time I will use sun dried tomatoes. The presentation was company worthy.

I tried this on a whim since I had all the ingredients. I thought it was juicy and tender. The bacon was a nice touch, but I didn't use as much as the recipe called for since I only had 4 slices. After tasting the recipe as written, I added a bit of balsamic glaze which really heightened all the flavors. Definitely worth a try.

We really liked this dinner. Chicken was juicy and tender. Definitely keeping this one. My husband gave me his tomatoes because usually he doesn't eat them.

This was really good after I took the bacon off. I thought the bacon was too overpowering and salty. Also, it didn't taste like caprese with the bacon. Next time I will leave the bacon off. I sliced the tomatoes thick and the cheese as well. I will make it again without the bacon.

Great to impress guests. Easier to make than it looks in the photo and it is delicious as well. It is now one of our favorites.
