Broccoli Boo Salad
Total TimePrep: 10 min. + chilling
- 1 cup Miracle Whip
- 1/4 cup sugar
- 2 tablespoons vinegar
- 8 cups broccoli florets
- 1 can (11 ounces) mandarin oranges, drained
- 1/2 cup chopped red onion
- 6 to 8 bacon strips, cooked and crumbled
- 1/2 cup raisins
- In a small bowl, whisk Miracle Whip, sugar and vinegar. Cover and refrigerate for at least 2 hours. In a large bowl, combine broccoli, oranges, onion, bacon and raisins. Add dressing and toss to coat. Cover and refrigerate for 1 hour.
Nutrition Facts3/4 cup: 217 calories, 16g fat (3g saturated fat), 9mg cholesterol, 166mg sodium, 16g carbohydrate (13g sugars, 2g fiber), 3g protein.

I still have the original magazine copy of this recipe and have been making it since 1998. In my opinion miracle whip gives the needed twang that mayonnaise misses (normally I am a mayo fan) although I reduce the sugar to 2 tbsp. I use cider vinegar. I also add 1/4 cup seeded sunflower seeds. Everyone loves this salad. The Mandarin oranges make it unique.

I have made this delicious colorful broccoli salad several times. The orange, raisins and bacon add great flavor to the broccoli. The slightly sweet dressing is also very tasty!

I recall preparing this salad when it was featured in Taste of Home! I DID make adjustments: I used Ranch dressing instead of mayonnaise with the sugar and vinegar.I'd used LESS the amount of broccoli florets since there was only my Mom and me at home-I used 4 TO 8 cups, the regular amount of mandarin oranges, well-drained, 1/2 TO 1 cup chopped EITHER red OR yellow onion. Instead of bacon STRIPS, I used 1/2 cup bacon BITS OR use the Hormel cooked, crumbled bacon-1/2 cup and 1/2 cup of raisins.What I had done, since the Ranch dressing is already prepared, I just added the sugar and vinegar to it. Then I prepared the salad, poured the dressing over the salad, and tossed as I'd assembled it all at one time! I refrigerated the salad, covered, at least 3 hours. Miracle Whip already has sugar in it, so why not replace Miracle Whip with Mayonnaise? After the second time making this, this was much better.

I have made this recipe too many times to count! It always goes quickly at church picnics and family gatherings. I usually substitue mayonnaise instead of Miracle Whip because we don't like the taste. The recipe still works great. Make sure you allow enough time for the flavors to mix. I have made this the night before or earlier in the day and it still works great. I sometimes use the pre-baked bacon, just rip it up and toss it in. It speeds up an already quick recipe even more!
