Biscuits for 2
Total TimePrep/Total Time: 25 min.
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 2 tablespoons shortening
- 3 tablespoons milk
- 2 tablespoons butter, melted, divided
- In a small bowl, combine the flour, baking powder and salt; cut in shortening until mixture resembles coarse crumbs. Add milk, tossing with a fork until a ball forms.
- Turn onto a lightly floured surface; knead 5-6 times. Roll or pat to 1/2-in. thickness; cut with a 2-1/2-in. biscuit cutter. Place on a greased baking sheet. Brush tops with 1 tablespoon butter. Bake at 450° for 9-11 minutes or until golden brown. Brush with remaining butter. Serve warm.

Can’t understand the guy that said the recipe is soupy! There is hardly any liquids added. Great recipe the only caution is this does NOT make four biscuits. Double the recipe for four biscuits. As others said double the baking powder as well... or 4x the amount of you double the recipe. Our biscuits were about 2 inches around and an inch 1/2 high. Flaky, fluffy and really tasty! Wish I could add a picture!

What a horrible recipe. The real crime here is the waste of food; butter, flour, etc. Not to mention time and desire to feed your family. Soupy, no ability to fold or bring the ingredients together. Remove this recipe; it's an insult.

This recipe is great. I substituted 1 1/2 T. Of yogurt for 1 1/2 T. Of the Milk. They were so light and fluffy like Popeyes biscuits! If they didn’t rise it could have been your baking powder. If it’s hard or wrong amount, they may not rise. Good recipe.

Don't bother to make these. They don't raise at all. I even added extra baking powder per other people's advise on the reviews.

I substituted Gluten-free flour mix recipe from TOH.com for the 1/2 unbleached all-purpose flour. I drizzled honey on them while hot just before serving. The biscuits were delicious; and just the right amount for my husband and I.

This made very tender biscuits. I did increase the baking powder to a rounded teaspoon, since other reviewers mentioned having trouble getting them to rise, and I patted them out a little thicker than 1/2". I love being able to easily mix up just enough for the two of us!

I doubled the recipe and it made the perfect amount. I didn't get much lift though. I think I would add a little more baking powder next time to see if that would make them fluffier.
