Banana Rice Pudding
Total TimePrep: 10 min. + chilling
- 1 cup cooked long grain rice
- 1/3 cup sugar
- 1/3 cup heavy whipping cream, whipped
- 1 large firm banana, sliced
- Fresh mint, optional
- In a bowl, combine rice and sugar. Cool completely. Fold in whipped cream and banana. Cover and refrigerate until serving. Spoon into serving dishes; garnish with mint if desired.

I have been making this pudding for a year now. It was the first recipe for rice pudding I tried. Now, it's the ONLY one I make! My husband is very picky about good rice pudding and he loves it. Simple to make. Simple ingredients. Fantastic taste. I divide into small containers so he can take to work for lunch. Awesome recipe!

Had some left over bananas and whipping cream and didn't want to waste them. Even thought my bananas were turning brown, this was super simple and delicious!!! Yum
