Banana Chocolate Chip Cookies

- 1/3 cup butter, softened
- 1/2 cup sugar
- 1 large egg, room temperature
- 1/2 cup mashed ripe banana
- 1/2 teaspoon vanilla extract
- 1-1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon baking soda
- 1 cup semisweet chocolate chips
- In a small bowl, cream butter and sugar until light and fluffy. Beat in the egg, banana and vanilla. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture and mix well. Stir in chocolate chips.
- Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake at 350° for 13-16 minutes or until edges are lightly browned. Remove to wire racks to cool.

Can I add nuts to these cookies?Yes, for added texture, stir ½ cup chopped toasted pecans or walnuts into the batter. To toast nuts, bake in a shallow pan in a 350° oven for 5-10 minutes or cook in a skillet over low heat until lightly browned, stirring occasionally.
How do you ripen a banana quickly?When baking with bananas, use ones that are ripe (or even overripe) to yield the best flavor. If you have a day or two to spare, place bananas and an apple, avocado, peach or tomato in a brown paper bag and keep on your counter. This will trap the ethylene gas of the fruits and quicken the ripening process. To ripen bananas even faster, place them in their peels on a baking sheet and warm in a 250° oven for 15-20 minutes. This was so yummy! I also recommend adding one tsp of cinnamon, but that banana flavor is magical! Will bake again.

Fantastic!!! I added 1 tsp of cinnamon this this recipe and it is so good! I really think it needed this added spice for a very flavorful cookie. Definitely will make these again.

I measured half of these with a tablespoon and half with a teaspoon. The teaspoon size tasted better. I also added cinnamon and nutmeg, otherwise they would taste bland.

These are good! I doubled the recipe, since I had three aging bananas to use up. Around two and a half bananas made up a cup. I was short butter by around a tablespoon. It did not matter. I used the large Pampered Chef cookie scoop. I got 41 good-sized cookies.

I loved this recipe! it is fast and easy, however they are a little more like biscuits or cake than cookies. Overall I think they are great in a pinch. :)

I bake a lot!!! Loved this easy recipe... Best one yet.... Easy for kids to help. Taste is great.. Made it a few times. Made some changes. Used a cup of banana and added three tablespoon of flour.. Definitely will be made again and again.. Thanks E Wicker
