Bacon-Wrapped Sweet Potato Bites

- 2 tablespoons butter, melted
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon ground cinnamon
- 2 large sweet potatoes (about 1-3/4 pounds), peeled and cut into 1-inch cubes
- 1 pound bacon strips, halved
- 1/4 cup packed brown sugar
- Maple syrup, warmed
- Preheat oven to 350°. In a large bowl, mix butter and seasonings. Add sweet potatoes and toss to coat.
- Wrap 1 piece bacon around each sweet potato cube; secure with a toothpick. Sprinkle with brown sugar. Place on a parchment-lined 15x10x1-in. baking pan.
- Bake until bacon is crisp and sweet potato is tender, 40-45 minutes. Serve with maple syrup.

This was super easy and super delicious. I added chili powder and added only a pinch of cayenne. 1/2 a slice of bacon per cube of sweet potato was perfect.

These are delicious! I did turn them a couple of times after the half-way point just to be sure the bacon cooked well. I did not use maple syrup, they don't really it. Also, had some coated potato chunks left over (ran out of bacon) so I baked them as well. Even without the bacon, they are so, so good! These might become my go-to for party appetizers.

These were a big hit this thanksgiving. Very easy to make and tasted great. No need for the maple syrup. I did add a little extra cayenne by mistake and it added an extra little kick at the end of the bite. We'll be making these again!

Easy to make, and delishous! No syrup needed, turn on there side last 10 minutes to brown more evenly

Tasty and impressive. Very easy to prepare. I par baked my sweet potato. They baked perfectly. I did cut back on the brown sugar. A great little make ahead then just bake up and serve. Tasted good even at room temperature. VFE. A great choice for the Holidays.

We love candied bacon wrapped smokies, so this was my chance to make a “fancy” version. My kids don’t care for sweet potatoes but these were a hit!

This recipe is a lot of pre. l highly recommend putting sweet potatoes on a rack before baking, too much brown sugar. I was afraid my oven was going to catch on fire. Won't make this again.

These are so yummy...but very time consuming...the only problem..as you have to hand wrap each one...but worth it lol...I took these for a thanksgiving potluck and was requested I make them for christmas...made a double batch...took a few hours but lol...the only prob I had was if you use the parchment paper the bottoms tend to burn...but I was told by some that the little burned pieces on the bottom gave it a little extra taste...My brother in law threatened to run off with them when I made them for a third time for Xmas day...and just eat those lol...but they taste better when you eat them fresh versus making them ahead of time and putting them if the fridge...definitely will have to make them again...
