Apple-Pear Puff Pancake

- 3 tablespoons butter
- 4 large eggs
- 1 cup 2% milk
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1/8 teaspoon ground nutmeg
- 3 tablespoons butter
- 3 medium apples, sliced
- 3 medium pears, sliced
- 3 tablespoons sugar
- Maple syrup, optional
- Preheat oven to 425°. Place butter in a 10-in. ovenproof skillet; heat in oven until butter is melted, 2-3 minutes. Tilt pan to coat evenly with butter.
- Place eggs, milk, flour, sugar and nutmeg in a blender; cover and process until smooth. Pour into hot skillet. Bake until puffed and browned. 17-20 minutes.
- Meanwhile, for topping, heat butter in a large skillet over medium heat. Add apples, pears and sugar; cook until fruit is tender, stirring occasionally, 12-15 minutes.
- Remove pancake from oven; fill with fruit mixture and serve immediately. If desired, serve with syrup.

This is fantastic and fun to make for breakfast. I like to use 4 - 6" individual fry pans so everyone has their own serving. FUN!

Made this for New Year's Day brunch. Everyone enjoyed it. Very easy and delicious. The only thing I would do differently for the future is put the pears into the skillet a few minutes after the apples as they cook faster than the apples and had a softer consistency when cooked the same amount of time.

I often make this puff pancake with apples. When I saw the December 2014 Taste of Home magazine and I had a pear in the refrigerator, I made this version. I leave the sugar out of the batter. I use a cast iron pan to bake the pancake in. I cook the fruit on the stove top. Pour the batter over the fruit then bake it.

This recipe is so good! Although it's delicious with our homegrown pears and apples, sometimes I omit the fruit and just serve it with maple syrup. My family likes it either way!

My husband and i made this for valentines day. We made it with all apples and it was really good! Just like our favorite restraunt. (tip...dont burn your hand on the handle like we both did !)
